Description
  • Grape variety: Grasparossa - Salamino - Maestri - Malbo Gentile
  • Production area: Matildic hills in the province of Reggio Emilia, a highly suitable area, located on silt-clayey soils
  • Harvest: Grapes selected and harvested by hand
  • Alcohol content: 11% VOL.
  • Vinification: Cryo-maceration on the skins for a few days, with its own yeasts at a controlled temperature. In the following February, it is bottled, where the refermentation takes place, at the end of which the wine becomes sparkling.
  • Organoleptic characteristics: Rightly evanescent foam, with persistent perlage. Very intense red color, with violet reflections. Evolved and ripe aromas, of good intensity with notes of red fruits and ripe grapes. Flavor with a fresh taste, good structure, pleasant on the palate, harmonious and rightly tannic.
  • Pairings: Traditional first and second courses of Emilian cuisine, perfect red meats and sausages
  • Service temperature: 10°-12°
  • Cultivation method: Organic - Biodynamic Demeter
