Our biodynamic type “2” stone ground flour to maintain all its beneficial properties, comes from the selection of 5 ancient varieties of soft wheat. Ancient grains have a more balanced relationship between gluten and starch, an aspect that makes them lighter and more digestible, moreover ancient grains are not stressed with chemical fertilizers or genetic alterations to increase production, resulting in healthier and more environmentally friendly.
